Lavender-Rose Jelly


  • 1/2 cup mixed, clean/organic rose petals and lavender flowers
  • 2 cups sugar
  • The juice of one lemon (about 1/4 cup)
  • One packet (3 oz.) liquid pectin

Steep rose petals and lavender in hot water for about five minutes.

Strain through jelly straining bag or cheesecloth into non-reactive pot.

Add 2 cups of sugar and stir.

Add the lemon juice.

ISN’T THAT COOL??? It was all muddy brown, then you add the lemon juice and BAM! it’s all pinkish-violet! It’s worth making this just for that!

Bring to a boil for two minutes.

Add pectin.
Boil for three minutes.

Jar ‘em, process ‘em, enjoy ‘em.

Makes about three 1/2 pints.
