Jammy Windows


  • 2 cups flour
  • 1 cup butter
  • 1/2 cup + 1 TBSP sugar
  • 1 tsp vanilla (or 1/2 a bean’s innards)
  • 1/4 tsp salt
  • 2 tsp microplaned orange zest (or lemon or lime…I just use the zest from the whole fruit then squeeze out the juice for other uses)
  • powdered sugar

Whisk flour and salt.

Cream butter and sugar until smooth and fluffy.

Add vanilla and orange zest and mix in.

Add flour in three parts — do not over mix.

Roll into a log; wrap in wax paper and put in fridge overnight.

Cut into 1/4 inch thick rounds; cut extra tiny cutout in the middle of half: hearts and circles!

Place rounds on parchment-covered cookie sheet; put this in freezer for 20 minutes.

Bake at 325 for 12-14 minutes.

When cool, dust the cut-out cookies with powdered sugar.

Slather the whole cookies with jam.

Top the jam-slathered whole cookies with the powder-sugared cut-out cookies to make them into sammiches.
